I got this recipe from another blog, so I can't really take credit for it. BUT, I can tell you that it was easy, delicious, and defintely one I will make again. Enjoy!
8 oz. uncooked rigatoni
1 TBL Olive oil
1 Cup finely chopped onion
1 10 oz. pkg. frozen chopped spinach THAWED
3 Cups cubed chicken breast
1 14 oz. can of Italian style tomatoes (undrained)
1 8 oz. chive and onion cream cheese
1/2 tsp. salt
1/2 tsp. pepper
1 1/2 cups Mozzarella
Spread oil on bottom of 11x7 baking dish. Bake onions at 375 for 15 minutes. Drain and press spinach. Cook rigatoni and chicken. Dice chicken and mix all ingredients together, including cooked pasta. Spoon into baking dish. Top w/ cheese. Bake 375 covered for 30 minutes and then 15 minutes uncovered. ENJOY!!!!

i'm definitely going to try this one. when i went to copy it into word, i couldn't figure out what went wrong because it didn't paste right and then i realized, duh, it was just a bit hard to see the white font in the word document. fixed it, i'm a genius.
I can't wait to try this recipe. It looks delicious!
Oohhh, this sounds SO good. What would my family do without your recipes? Can I just hire you as our personal dinner chef??? In 3 years I'll pay really good! :)
