Best Muffins Ever!


I am on a major pumpkin kick lately. I made these muffins this week and had to send the majority of them with Jason to work so I wouldn't sinlge handedly consume them all myself. These are so good I almost hate to share the recipe. But in the spirit of thanksgiving and gratitude, I guess I will. Enjoy!

Pumpkin Cream Cheese Muffins

3 cups all purpose flour
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon ground cloves
4 teaspoons pumpkin pie spice
1 teaspoon salt
1 teaspoon baking soda
4 eggs
2 cups pumpkin
2 cups sugar
1 1/4 cups vegetable oil
8 ounces brown sugar/cinnamon spice cream cheese spread
1 cup semi-sweet chocolate chips (optional)
Chopped pecans/walnuts , optional


Preheat oven to 350. Mix together the sugar, eggs, oil and pumpkin. Combine dry ingredients and spices and add to wet mixture. Stir in chocolate chips. Grease or line 24 muffin cups. Fill muffin cups half full. Spoon approximately 1 tablespoon of cream cheese into each muffin and top with more muffin mix (just enough to cover). Sprinkle with 1 teaspoon chopped nuts. Bake at 350 for 20-25 minutes, until a toothpick comes out clean from the muffin part (not the cream cheese). Let cool in pans for 5 minutes, then remove to racks to cool completely.

I'm also loving pumpkin lately! I can't wait to try these muffins! I have a very yummy recipe for chocolate chip pumpkin bread/cake/muffins. I can e-mail it to you if you want.

Hey Nancy! I saw your blog link on Kelly Larsons...I hope you don't mind! Welcome to the world of blogging!!! Zak's convinced this online stuff is going to take over scrapbooking....naw! Hello Nancy! I loved seeing your comment on my blog, but didn't know how to respond to you. So, I am happy to finally find your blog.(through Kellys) Your little guy Luke is so cute! I can't believe I have never seen him! Anyway, I LOVE that you post recipes and can't wait to try the gingersnap pie and the BBQ Burritos...sounds YUM!
