Friday night we had some friends over for homemade pizza and the Jazz game. I made one of my favorite Kristie Crockett (friend and amazing cook that I met in Ohio) recipes. It is definitely worth sharing.
Fresh Salsa
1 11-ounce can shoe peg corn, drain
1 15-ounce can black eyed peas, drain
3 avocados, diced
5 Roma tomatoes, diced
3 green onions
1 packet dry Italian salad dressing mix
3 tablespoons water
2 tablespoons oils
Combine dry Italian dressing packet with water and oil. Mix together with remaining ingredients and serve with your favorite chips.
*My husband is not a huge fan of canned corn, so I usually cook up a cup and a half of the yummy sweet corn from Costco or Walmart. I let it cool and then toss it in.

This is the best salsa recipe. I remember when you made this once.
I use Kristie's and your recipes all of the time. Love that Ohio Friends Cookbook!
